- 1.5 lbs pork belly with skin
- 1 cup white wine
- Fresh parsley and cilantro
- 1 bell pepper diced
- 1 lemon juiced
- Salt and pepper to taste
- 2 cloves garlic minced
- Prepare marinade: mix white wine, herbs, garlic, bell pepper, lemon, salt and pepper.
- Score pork belly skin in crosshatch pattern.
- Place pork belly in marinade, cover and refrigerate overnight (minimum 8 hours).
- Remove from marinade, pat skin completely dry with paper towels.
- Place in air fryer basket skin-side up.
- Cook at 356°F (180°C) for 35 minutes.
- Check crispiness — if needed, increase to 400°F for final 5 minutes.
- Rest 5 minutes before slicing. Serve with Sicilian lemon risotto.
